Sumo Orange + Cream, with Grand Marnier & Dark Chocolate

The dessert - Oranges + Cream!
It really seemed too simple to be as good as it was! But I guess that’s the point with truly healthy food. Less is more! Local, seasonal ingredients put together in a thoughtful way. The taste was nothing short of extraordinary.
Sumo Orange Segments + Cream with Grand Marnier + Coconut Dark Chocolate
INGREDIENTS
8 Sumo oranges
2 cups heavy cream
8 Tablespoons Grand Marnier
2 ounces dark chocolate, sweetened only by coconut sugar, chopped (I like HU brand)
METHOD
Slice off the top 1/3 of 8 Sumo oranges. Set aside the tops.
From the newly cut top edge, using a paring knife, slice the skin in 5 spots, cutting ~2” down each time. This will create a star like effect.
Carefully pull out the orange flesh, keeping the remaining orange skin bowl in tact.
Chop the extracted orange flesh into bite-sized segments. Set aside.
Whip the cream in the bowl of a stand mixer or a hand mixer with a whisk attachment until stiff peaks form. Set aside. (Pro tip: Place your whisk attachment in the freezer for a few minutes before you whip, as the chilly beaters help the cream whip up beautifully!)
Place orange-skin-bowls into coupe or martini glasses.
Fill cavity with chopped orange segments and top with a squeeze of juice from the reserved orange tops.
Pour 1 Tablespoon of Grand Marnier on the orange segments in each glass.
Plop a spoonful of whipped cream on each orange segment pile and garnish with a generous pinch of chopped dark chocolate.
