Yield: 8 - 12 Servings

I simply cannot express how vibrantly delicious, how crave-worthy, how fl-awesome this salad is with words alone. Ya gotta just trust me and make it. You’ll see!!! 😍

Chopped Greek Salad

Ingredients - Dressing

1/2 cup extra virgin olive oil

1/4 cup red wine vinegar

1/4 cup balsamic vinegar

2 Tablespoon feta cheese brine

2 Tablespoon fresh dill, chopped

1 teaspoon dried oregano

½ teaspoon sea salt

2 garlic cloves, peeled and minced

Juice from ½ lemon

Method - Dressing

  1. Place all the ingredients into a mason jar.

  2. Shake Vigorously!

  3. Set aside while you chop the veggies.

Ingredients - Salad

3 yellow bell peppers, chopped into bite-sized pieces

2 English cucumbers,chopped into bite-sized pieces

2 pints grape tomatoes, sliced in half

½ red onion, thinly sliced

1 cup feta cheese, crumbled

1 cup pitted kalamata olives, sliced in half

Dill Sprigs, for garnish

Method - Salad

  1. In a large bowl toss the vegetables, 3/4 cups of the feta cheese and 3/4 cups of the kalamata olives together.

  2. Give the salad dressing another vigorous shake and pour most of it on the salad. Toss again, taste and add more dressing if needed.

  3. Top with remaining feta cheese and kalamata olives and a few fresh sprigs of dill for garnish.
