Shrimp + Scallion Dumplings

A Lunar-Valentine delight

We often think of Valentine’s Day as the “big” holiday of February but for the Chinese and those lucky enough to have Chinese friends, Lunar New Year is by far bigger! I love to celebrate both occasions and think this recipe is simply Flaweless for both - together or separately! 🐉💞

When my co-author Augie Haas and I were thinking about what to theme “Chapter: February” in our cookbook and Supper Club “Sounds Delish”, we landed on Lunar-Valentine. This recipe is our favorite and so fun to make for your little dumpling. 🥟😽

Shrimp + Scallion Dumplings

INGREDIENTS - Filling

1 pound raw shrimp, peeled, cleaned and roughly chopped

1 teaspoon sea salt

½ teaspoon ground black pepper

1 tablespoon freshly grated ginger

⅓ cup chopped scallions

1 teaspoon toasted sesame oil

½ cup chopped cilantro leaves, plus more for garnish

1 serrano chile, seeds removed and minced

50 round dumpling wrappers

INGREDIENTS - Dipping SAUCE

½ cup rice vinegar

1 teaspoon spicy sesame oil

2 scallions, thinly slivered

METHOD

  1. In a medium bowl mix shrimp, salt, pepper, ginger, scallions, sesame oil, chopped cilantro and serrano chile. Cover and refrigerate at least 1 hour.

  2. (Using a dumpling press is super helpful in this step but if you don’t have one, your thumb and forefinger will work just fine!) Place one dumpling wrapper on press or work surface and lightly moisten the edge of the wrapper with water.

  3. Place a heaping teaspoon of shrimp filling in the center of the wrapper and fold. Pinch the press together to surround filling and form a half-moon. If you are not using a press, pinch the edges with your thumb and forefinger pleating the edges to secure as you go.

  4. Bring a large low pot of well-salted water to boil over high heat.

  5. Meanwhile, make the dipping sauce: Whisk together rice vinegar, spicy sesame oil and slivered scallions in a small serving dish.

  6. Add 10 dumplings at a time to the pot. When they bob to the surface, simmer 4 minutes, then remove with a slotted spoon or spider. Serve each person 2 dumplings (or 4 for dumplings for 2!) in a small bowl. Drizzle with 1 teaspoon dipping sauce and garnish with cilantro sprigs.
