Sausage Florentine Egg Casserole
This is an easy and fantastic recipe for Brunch but I also love serving it for dinner! My favorite meals as a kid were when my Mama had “breakfast for dinner!”. Here’s the recipe:
Sausage Florentine Egg Casserole
INGREDIENTS
2 tablespoons Olive Oil
1 Onion, chopped
8 ounces mushrooms, sliced
3 Garlic cloves, chopped
1 10oz package frozen, chopped Spinach, thawed
1 pound loose Sweet Italian or Breakfast Sausage
2 tablespoons fresh herbs like thyme, sage or rosemary, chopped
Salt & Pepper
12 Eggs
1 cup Heavy Cream
3/4 cup Sharp Cheddar, shredded (or any hard cheese)
1/2 teaspoon Sweet Paprika
METHOD
Preheat oven to 375 degrees.
Heat olive oil in a sauté pan over high heat. Add onion and mushrooms and cook, stirring frequently, until softened.
Add garlic and cook until fragrant, about 30 seconds.
Add spinach and cook, stirring often, for 3 minutes.
Add sausage and cook through, separating meat into small chunks as you go.
In a large bowl whisk 12 eggs. Season with herbs, salt and pepper.
Add cream and cheese and stir until combined.
Spray a casserole pan with cooking spray and then cover bottom with meat/onion mixture. Top with egg mixture.
Sprinkle surface with smoked paprika.
Bake 25 - 30 minutes, just until set.
