Flaweless Lemon Cookies
I’ve made prettier cookies but these might be the best tasting cookies that have ever come out of my kitchen! If you love lemon you’re going to think you’ve died and gone to heaven. Not to mention, the texture is also out of this world. Let’s dive in to this simple and Flaweless recipe for lemon cookies! 🍋
Lemon Cookies with Lemon Glaze
INGREDIENTS - For the Cookies
3 tablespoon lemon zest (~ two lemons)
1/2 cup unsalted butter, room temperature
1/2 cup granulated sugar
1/4 cup light brown sugar packed
2 cups flour (240g)
1/2 tsp salt
2 tablespoon cornstarch
1 teaspoon baking soda
1 large egg
1 teaspoon lemon extract
2 tablespoon lemon juice
INGREDIENTS - For the Glaze
1 cup powdered sugar
3 tablespoons fresh lemon juice
METHOD - For the Cookies
Using a food processor, whiz lemon zest and sugars together for about five 1-second pulses. Set aside.
In a large bowl, whisk together flour, salt, corn starch and baking soda. Set aside.
In a stand mixer fitted with a paddle attachment, beat butter and infused sugars until light and fluffy.
Mix in egg, lemon juice and 1 teaspoon lemon extract. Scrape the bowl down and mix once more.
Add the dry mixture to the wet and beat until almost combined. Scrape the bowl as needed and beat until combined.
Cover and chill the dough for at least 30 minutes.
Once chilled preheat oven to 350 degrees and scoop out potions of cookie dough using a 1 1/2” scoop. Place the dough onto parchment-lined baking sheets leaving about two inches of space between the cookies.
Bake for about 10 minutes or until the edges are set.
Let the cookies cool completely then coat in lemon glaze.

In a medium bowl mix powdered sugar with lemon juice until smooth.
Drop cookies in glaze one by one and turn to coat.
Move glazed cookie to drying rack to set and dry the glaze.
