Chewy Flaxseed Granola

with almonds, raisins, oats and honey
Time: 30 minutes
Yield: 8 cups

For granola to be Flaweless it needs to be moist and chewy yet still have a little salty-sweet crunch. I absolutely love Whole Foods Market’s version so I set out to copy it and this is it! I also want to thank the amazing www.thebusy.be for her recipe as it was an incredible guide!

Chewy Flaxseed Granola

INGREDIENTS

3 cups old fashioned oats

1 cup roasted and salted almonds, roughly chopped

1 cup raisins

1/2 cup sunflower seeds

1/4 cup flaxseed

1/3 honey

1/4 cup brown sugar, packed

4 tablespoons vegetable oil

1/2 teaspoon vanilla extract

Pinch of salt

METHOD

  1. Preheat oven to 300 degrees.

  2. Line rimmed baking sheet with parchment paper.

  3. In a large bowl combine oats, almonds, raisins, sunflower seeds and flaxseed; set aside.

  4. In a saucepan over medium heat, combine honey, brown sugar, oil, vanilla and salt and heat until the mixture foams for about 20 seconds.

  5. Pour the warm honey mixture over the oat mixture and stir until well combined and coated.

  6. Pour onto the parchment lined baking sheet and, using oil coated hands, press until it’s at a single layer.

  7. Bake for 18 minutes.

  8. Cool the granola completely and then break it into chunks.

  9. Place granola into an airtight container..
