keto plantain waffles

My best friend Molly’s husband Jerome is one of those dream-boys who can just whip up breakfast, for the entire family, in under 10 minutes. By the time I’ve asked how I can help he’s pouring my cup of French press and telling me to “sit down and enjoy Hans” (- yes my beloved nick-name in these parts is Hans).

Here’s his recipe for incredibly delicious waffles. Oh and they just happen to be made with only 3 ingredients and are also gluten-free and grain-free!

KETO Plantain waffles

INGREDIENTS

3 green plantains, peeled and slices into “coins”

8 eggs

2 teaspoons baking powder

1 teaspoon vanilla extract (optional)

METHOD

  1. Preheat waffle iron to medium high.

  2. In the body of a Vitamix or other strong blender blend all the ingredients until smooth.

  3. Brush waffle iron with oil and cook waffles until done.

  4. Serve immediately! We love to enjoy them with the usual butter, fruit and maple syrup of course but they are also sensational smeared with almond or coconut butter (which keeps them Keto😉).
