Autumn Fish ~ Baked Sea Bass with Butter & Lemon

One of the things I miss most about summer is seafood. For some reason in years past, it began to vanish from my grocery list starting in early November, but not this year! Here is my warm and cozy recipe for fish in Autumn.

Baked Sea Bass with Butter & Lemon

INGREDIENTS

4 sea bass fillets

2 Tablespoons olive oil

1 lemon, juiced

2 Tablespoons salted butter, cut into 4-5 pieces

1 teaspoon fresh thyme leaves

Salt and pepper

METHOD

  1. Heat oven to 400 degrees.

  2. Generously coat a heavy rimmed baking dish with olive oil.

  3. Place fillets in a single layer, skin side down, on the olive oil.

  4. Squeeze lemon over fish.

  5. Place butter pieces on fillets, evenly disbursed.

  6. Sprinkle fish with thyme leaves, salt and pepper.

  7. Bake for 12 minutes until the thickest part of the fillet feels firm to the touch and the flesh is white throughout.

Serve with your favorite autumnal sides, and enjoy!!
