Empellon was a growing company with 3 stores. Our restaurants were of smaller scale, all downtown. We didn't have much corporate overhead at the time. Most of the decisions were happening at the store level. My only hesitation with hiring Christine was the work/life balance and if she'd get the time with her son that she wanted, while opening a large new flagship restaurant. But Christine and I had good energy together. I knew we'd figure out the home dynamic and be able to give the business what it needed. With honesty, integrity, organization, care for the team, and professionalism, she offered General Manager responsibilities for a large-scale restaurant. Christine installed systems, protocols, training materials, hired the team, and launched the restaurant to the public. Christine laid the groundwork and foundation at Empellon Midtown. Many things have changed since then, but key pieces stemmed from her time at Empellon. Empellon received 3-stars from the NY Times, which was a direct correlation to Christine's work.
